COOKIES! They are the best, aren’t they? There’s something about the smell of freshly baked cookies making me go crazy.
I love when I feel like my entire home is one big bakery and there’s cinnamon-toasted-something everywhere.
That’s why today I decided to bake me some.
I wanted to make some cookies fit for a hot summer day, to be enjoyed with a cold glass of milk.
And let’s face it, what screams “summer” more than Piña Colada? Whoever thought of putting coconut and pineapple together must have been one evil genius.
The flavors complement each other like chocolate and peanut butter (now that’s another great cookie flavor right there!) and in combination with a soft and cakey oatmeal cookie – heaven!

INGREDIENTS
DRY INGREDIENTS
- 1 cup whole grain spelt flour
- 2 cups quick cooking oats
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground vanilla or seeds from 1/2 a pod
- 1/4 teaspoon salt
WET INGREDIENTS
- 2 tablespoons coconut oil melted
- 3/4 cups maple syrup
- 1 medium banana mashed
- 2 medium sized eggs
OTHER
- 1/2 cup dried pineapple chopped
- 1/3 cup unsweetened shredded coconut
INSTRUCTIONS
- Preheat the oven to 350°F.
- In a large bowl, mix all the dry ingredients together.
- In a smaller bowl, whisk all the wet ingredients together. Add the wet ingredients to the dry ingredients and combine until a batter forms. Fold in dried pineapple and shredded coconut.
- Line two baking trays with parchment paper. Using a spoon drop the batter onto the baking trays to form cookies (2 tablespoons each for large cookies or 1 tablespoon each for smaller cookies). Flatten the cookies into a round - they will rise nicely while baking.
- Bake for 20 minutes (30 minutes if you're making large cookies) or until nicely browned. Cool on a wire rack.
